Begin by doing the "bloom" by pouring 55-60g of hot H20 evenly over the coffee beans.
Let sit for approx 30-40 seconds as it degases and releases the C02. Then begin pouring in intervals of 100-150g of water, being sure to evenly distribute the water across all grounds. Your goal is to keep a flat coffee bed the whole time. Pour until you arrive at 400g of water. If your grind size was correct, this should take around 3.5-5 minutes.
Here is a good video from another coffee company who did a good job at showing how to make a Chemex. (although he did a REALLY long bloom at 1:30 seconds......I've tested that long of a bloom and personally do not like that - but feel free to test and try for yourself!)

"Steaming" Milk
Start with milk of choice and warm either in microwave or over the stove. If you are microwaving, be sure to stir at intervals so not to burn the milk.
Once warm, place in a blender and pulse on/off, on/off to whip air into the warm milk.
Pour desired amount over freshly brewed coffee.

Making house-made syrups
It's very easy to make your own syrups at home to sweeten your coffee if desired.
A classic is honey & cinnamon. I suggest 15-25g of honey and 2-3 dashes of cinnamon for a large cup of coffee (12-16oz)
Maple & Cinnamon is another great option. Maple is a bit sweeter, so start with 10g and go from there.
Raw simple syrup is easy to make and is a great base for many flavors. Add 1 part raw sugar and 1 part off-boil water and stir to dissolve. Add in herbs of choice or a vanilla bean while the syrups is still hot. I love rosemary + vanilla bean as a combo.
You can also add all spice, ginger, cinnamon or just "pumpkin spice" into simple syrup to create your #PSL.
Add to your hot coffee or espresso, stir, top with "steamed" milk and ENJOY!
